Cooking 101 – Healthy Desserts

The other night I was craving chocolate, badly. I was about to grab the car keys and drive to the supermarket to buy a big block of chocolate. Fortunately, my darling talked me out of it. However, the cravings remained. There comes a time when you just have to give in, but giving in doesn’t have to mean eating a block of chocolate. Instead, I decided to make dessert.
I’m a huge fan of fruit desserts, especially the crumble – apple & rhubarb, peach & blueberry, give me any with a dollop of ice cream and whipped cream and I’m a very happy lady. So I searched through the pantry and found a can of pineapple and a can of passionfruit, I sliced up couple of apples then layered the fruit in an oven proof dish. 
In a separate bowl I mixed up some oats, coconut, almonds, sunflower seeds, cranberries and melted butter. Once the ingredients were blended I used them to cover the fruit, placed the dish in the oven, and twenty-five minutes later out came a yummy and healthy dessert with no added sugar other than what was in the fruit. This was a rush job, if I wanted to spend a bit more time I would have cooked the apples prior to baking so that they would be less crunchy. 
Crumbles are great as they can be made quickly and with few ingredients – and if there’s some left over you can always have it for breakfast the next day!
