Cooking 101: Quinoa

Store bought quinoa (you can also get in most health food stores)

Sometimes you either don’t have the time nor the energy to come up with fancy healthy meals. Come Sunday night you’re thinking what this week’s lunch is going to look like at work. No need to worry, with some quinoa and vegetables you can have a delicious healthy meal that will satisfy your tastebuds, a grumbling stomach and your energy needs. 
Chop up your veggies

Quinoa rocks!
It’s delicious and versatile. You can eat it for breakfast, lunch or dinner and mix it with fruit or vegetables. 
Fry up some diced onion
Quinoa is high in protein so there’s no need to add a serving of meat to the dish if you don’t want to. Instead fill it up with your favourite vegetables instead.

Quinoa comes in shades of white, red and brown so you can colour your meal with this seed. They are all equally yummy and just depend on what you like and what you can get in the shop although the seed is showing up on more supermarket shelves.
Combine all ingredients in a pan, cook and cover with the stock
Let it boil, the quinoa will expand (about 10-15mins)
I love this meal because it’s easy to make, only needs a few ingredients and tastes delicious even when you’ve been enjoying it for lunch three days in a row. You can also add a side salad to the dish if you like. The more salad the better!

Serve on a plate with a side salad (here we had two types of cabbage)
