Foodie Friday: Vegetarian Nachos

We’ve a new favourite meal in our household, vegetarian nachos. I love Mexican food especially when it includes sour cream and guacamole. While nachos are generally looked as a junk food, the vegetarian version is delicious and packed with colourful vegetables and much leaner than it’s meat counterpart.

I got the idea for these Vegetarian Nachos from Frugal & Thriving and simply tweaked it to suit the ingredients that were in our fridge. I was lucky to pick up a cheap pack of Doritos at the supermarket the day I got a craving for them too which made me even happier.

The downside of these nachos is that I couldn’t help myself and went back for seconds! And had to stop myself from reaching for a third serving. If you stick to normal portion sizes you can easily feed 2 for three meals or a family of six for one meal.

I fried up some onion, grated zucchini, canned tomatoes, canned corn, canned kidney beans and four bean mix, add herbs and spices including oregano, salt, pepper, and chilli flakes. The packet of Doritos went into a oven safe glass dish, followed by a sprinkling of grated cheese, the heated vegetables, some more cheese, and in the oven for 15 minutes on 170C. I made some quick guacamole by mashing an avocado with a bit of lemon juice and salt. Instead of sour cream we used the greek yoghurt that was in the fridge.  I also added some salsa on the side for extra spice.

Yummy. I’ll be making this one again at the weekend.
